Asparagus Beef Stir Fry

Yields: 4 servings
Ingredients
1 cup CalRose Rice
1 tablespoon olive oil
¼ teaspoon sea salt
1 tablespoon olive oil
1lb sirloin steak, cut into bite-size pieces
1 lb asparagus, trimmed and cut into 1” pieces
6 scallions, minced and greens saved
2 garlic cloves, minced
2 teaspoons minced ginger
3 tablespoons soy sauce
1 tablespoon rice vinegar
Instructions
To start, combine the rice with 1 ¾ cup water, olive oil, and salt. Bring to a boil, reduce to a simmer, and cook until the liquid is absorbed and the rice is tender; 20 to 25 minutes.
Meanwhile, heat a skillet over medium heat. Add the olive oil and beef, cooking the beef is cooked through. Remove the beef from the skillet and add the cut asparagus and scallions. Cook the asparagus until tender and bright green. Stir in the garlic and ginger, continue to cook for another minute or two.
Finally, stir the meat back in and add the soy sauce and vinegar. Cook for 2 or so minutes to heat everything through.
Divide the rice into four servings and top with the asparagus mixture. Finish with a sprinkle of sliced scallion greens.
