Avocado Rice

Attention avocado lovers! Get inventive with your avocados with this easy avocado rice recipe using California brown rice. This makes a wonderful side dish to any grilled meat.
Ingredients
1 cup California brown rice
1 ¾ cups chicken broth
1 Tablespoon olive oil
2-3 ripe avocados
1 lime, juiced
½ teaspoon ground cumin
1 garlic clove, finely minced
½ cup fresh cilantro, chopped
Salt and freshly ground black pepper, to taste
Directions
In a saucepan, combine rice with chicken broth and olive oil. Bring to a boil, and then reduce heat to simmer, cover and cook for 45 minutes, or until rice is tender and liquid is absorbed.
Peel and core avocados. In a large bowl, mash avocado and blend in lime juice, cumin, garlic and cilantro. Gently fold the avocado mixture into the hot rice and mix together. Salt and pepper to taste. Serve warm.
