2 tablespoons vegetable oil
2 each chicken breast
4 tablespoons Cajun seasoning
1 cup chopped tomato
1 cup chopped cilantro
3 cups chicken broth
2 cups California medium grain rice
Salt and pepper to taste

METHOD:
Get a sauté pan very hot, fully cover chicken breast with Cajun seasoning, add oil to hot pan, add the chicken breast and cook both sides until blackened. Remove the chicken and set aside for couple minutes, add the rice to the pan and let it brown, add the broth and turn heat to low. Let cook for about 20-minutes. While the rice cooks dice the chicken breast and add to the pan with the rice cooking in it. Once the rice is cooked, add the tomato and cilantro and lightly toss it with a spoon. Season to taste by adding salt, pepper or additional Cajun seasoning as needed. Enjoy.
