Feature Recipe

Grilled ling cod served with a tomato chipotle cream sauce, cilantro cream, and a California rice cake.

Serves

INGREDIENTS:

For this recipe you will need:
6 ea. Ling cod fillets [6 oz portions]
Olive oil
alt and pepper

For the cilantro cream:
1 cup chopped cilantro
1 and half cup heavy cream
1 tablespoon chopped garlic
Salt and pepper

For the tomato chipotle sauce:
1 cup chopped tomatoes
1 cup heavy cream
2 tablespoons chopped chipotle peppers
1 tablespoon chopped garlic
Salt and pepper

For the rice cakes
4 cups cooked rice [I prefer California short grain]
Half cup chopped onion
Half cup chopped bell pepper
1 cup panko bread crumbs
1 tablespoon chopped garlic
2 ea. Eggs
Salt and pepper

DIRECTIONS:

  1. Simmer vegetable stock. Keep on low heat in a sauce pan next to risotto pan. Keep a ladle ready for moving vegetable stock to rice.
  2. In a large pan add shallots and olive oil. Cook for two minutes
  3. Add rice and toast in oil. Stir for about a minute.
  4. Add wine and stir until the rice is dry.
  5. Add 25 percent of the hot stock.
  6. Stir and simmer until the rice liquid is gone.
  7. Continue until all the vegetable stock has been used and the rice is creamy.
  8. Add cheese and butter.
  9. Add asparagus.
  10. Season with salt and pepper.
  11. Add chopped mint and lemon zest.
  12. Scoop into bowls and garnish with fresh lemon zest, cheese and a few asparagus tips.
