Holy Flatfish Batman!

Growing up in Alaska provided many wonderful benefits. One of my favorite food benefits was the abundance of fresh seafood, such as King Crab, Salmon and Halibut, to name a few. I love to cook halibut, whether deep fried, sautéed or baked. Halibut is a lean fish with a snow-white flesh that is an excellent source of not only high quality protein but also Omega-3 fatty acids known to boost heart health. Here’s a yummy recipe that I’ve kicked up a bit with spicy Tabasco sauce. This is exceptionally yummy when served over Calrose rice.
Baked Halibut with a Kick
2 lb. Alaskan halibut steaks
1/2 cup white wine
1 lemon, sliced thin, seeds removed
1 c. sour cream
1/2 cup mayonnaise
1/2 tsp. Tabasco sauce
1/2 tsp. salt
1/2 tsp. lemon pepper
1 cup shredded cheddar cheese
½ cup shredded parmesan cheese
½ cup chopped green onions
2 cups warm, cooked Calrose rice
Preheat oven to 350 degrees. Place halibut steaks in a well buttered glass baking dish. Cover steaks with wine and lemon slices. Combine sour cream, mayonnaise, cheddar cheese, Tabasco, salt and pepper and pour over halibut. Sprinkle parmesan cheese over top. Bake 20 to 25 minutes. Remove from oven and sprinkle green onion over top. Serve warm over rice.
