2 cups cooked and cooled California medium grain rice
1 cup chopped tomato
Half cup chopped olives
Half cup shaved Parmesan cheese
Half cup pesto sauce (half cup chopped basil, 1/4 cup olive oil, 2 tablespoons grated Parmesan, 1 garlic clove, 2 tablespoons pine nuts, salt and pepper)
2 cups baby mix greens
Italian Pesto Rice Salad

In a large bowl add the rice, tomato, olives, and pesto and mix. Add the greens and toss lightly. Top with shaved Parmesan then serve.
