St. Patrick’s Day Rice Krispie Pearly Bites
Here’s a fun recipe for a yummy bite-sized marshmallowy dessert made with Rice Krispies Cereal ready just in time for your St. Patrick’s Day party. Remember to make this in two separate batches, one will be green, and one will be infused with lemon extract.
Ingredients for a Single Batch of Green Bites
3 Tablespoons Butter
3 cups Mini Marshmallows
2 teaspoons pure vanilla extract
3 cups Kellogg’s Rice Krispies Cereal
Food Coloring System to Make Green Bites (yellow and blue food coloring)
Wiltons White Sugar Pearls Sprinkles
Wiltons Squeeze Tube Green Decorating Icing
Directions
Melt butter in a medium saucepan. Add marshmallows and vanilla and stir until marshmallows are completely melted.
Remove from heat and thoroughly stir in food coloring to turn mixture bright green.
Stir in Rice Krispies Cereal and mix until rice is completely covered with the marshmallow mixture.
After mixture has slightly cooled to the touch, roll small even amounts of mixture into uniform balls, and promptly roll in sprinkles. Drizzle icing on top of each bite.

3 Tablespoons Butter
3 cups Mini Marshmallows
2 teaspoons pure vanilla extract
2 teaspoons pure lemon extract
3 cups Kellogg’s Rice Krispies Cereal
Wiltons White Sugar Pearls Sprinkles
Wiltons Squeeze Tube of Green Decorating Icing
Directions
Melt butter in a medium saucepan. Add marshmallows and extracts and stir until marshmallows are completely melted.
Stir in Rice Krispies Cereal and mix until rice is completely covered with the marshmallow mixture.
Remove from heat and let mixture cool slightly. Roll small amounts of mixture into balls, trying to keep size uniform and similar to green bites, and promptly roll in sprinkles. Drizzle icing on top of each bite.
Serve on a St. Patrick’s Day-themed platter and enjoy.
Makes 24-36 bite-sized balls.
